Chef Braley is a self-taught chef, who also mentored under Dominic Fricano for a 7 year period. While working with Dominic he learned fine Italian food and also how to hand toss homemade pizzas. From there, Chef Braley expanded his interest in the culinary field to making homemade soups and breakfasts of all sorts
He then took a 14 year break, but still couldn’t take his “heart” out of the kitchen. The passion stayed alive by cooking for friends and family and for family events. Lee was always reading books and magazines to keep up with the latest cooking trends and for new food ideas.
Chef Braley got back into cooking, learning steak and seafood dinners, along with Mexican cuisine. He is now employed at 2 local Malone restaurants. At the Pines Restaurant and Bar located in Malone, New York, Lee works the lunch schedule and enjoys making homemade soups daily. The Pines menu is very standard bar menu with a few unique salads and lunch specials. Once he got his footing with their menu, Lee then started to add some Mexican items to the lunch specials.
For the Malone Elks Club, Chef Braley have been creating menus for their high-end dinners but also for their many wedding menus, banquets, catering and large parties, some of which are for well over 250 people.
